“There are different grape varieties called Albillo, and the one in Gredos is Albillo Real, which produced the 2017 La Viña de Ayer Albillo, from a variety that has moderate acidity, so they thought they could do some skin contact, destemmed but fermented with skins and indigenous yeasts. It has a golden color (the white is much darker than the rosé, and the white is fermented as a red!), and it resulted in a nutty white, with notes of yellow plums and quince with a slightly tannic palate, with some influence from some flor that tends to grow very easily on Albillo. The tannins seem to replace acidity, in the style of a white from the Rhône. Experiment with white meat. 5,000 bottles were filled in May 2018.
Jesús Soto arrived in Gredos in search of Garnacha grapes for his popular rosé Naranjas Azules and he stayed. In fact, he now manages the cooperative form Cebreros, which is the largest player in the new appellation within Gredos.“
